I wasn’t expecting the straw-like earthiness to balance the fig sweetness so well—it’s delicate but never cloying on toast. The fact it’s never heated probably explains why the texture stays so smooth and raw. My only issue is the jar won’t last long at this rate.
The fruity apricot note really comes through in this honey—I've been drizzling it on yogurt every morning. Knowing it's never heated or blended makes it taste even fresher to me.
