The bay leaves give it a subtle warmth that really rounds out the salt, and the cayenne adds just enough kick without stealing the show. I sprinkled it over roasted potatoes and the Italian sea salt crystals dissolved beautifully. Definitely the most interesting seasoning I've bought in a while.

The celery seed and mustard come through just enough to give a warm, earthy kick without masking the fish. A tiny pinch on salmon before grilling did the trick, and the Italian sea salt flakes dissolve nicely instead of leaving gritty bits.

I’ve been sprinkling this on roasted potatoes and even simple scrambled eggs, and the bay leaf and cayenne come through warm rather than sharp. The salt itself is fine-grained enough that it melts fast, which I like.
